This five-course tasting menu explores a range of cuts, textures, and styles, moving from lighter dishes through to deeper, slower-cooked flavours. It’s a chance for the kitchen to put together something a little more thoughtful than the usual à la carte, while keeping everything honest and full of flavour.

Each course focuses on a different part of the animal, using a mix of techniques — from simple, clean cooking to richer, more comforting plates.
