The days are getting longer, the weather’s warming up and there’s a pretty carpet of bluebells and daffodils covering the fields surrounding Biggleswade.

It must be Easter!  A time for new beginnings and renewed hope.

Executive Chef Will’s Easter menu is bursting with the flavours of the new season.

Light and lovely starters include fragrant baked potato soup served with crispy panceta and leek. With a nod to the Mediterranean, there’s a To-Die-For Harissa roast lamb belly served with goat curd riata and topped with pistachio and pomegranate salsa.

The main event is Chef’s signature roast. Garlic and thyme roast beef or  Roast pork loin with homemade apple and vanilla ketchup, and a succulent corn fed chicken supreme.  For the vegetarians how about butternut squash nut roast. Other main courses are available for those wanting an alternative to a roast.

And then, who’s in for a delicious hot cross bun and butter pudding? Or how about a totally tropical taste of Mango & passion-fruit tart, pineapple salsa and coconut ice cream. Just a few of the mouth-watering creations conjured by our culinary magician.
